Vastuni Extra Virgin Olive Oil is an Certified high-quality monocultivar Sicilian EVOO obtained using only the Moresca olives variety. The olives are harvested by hand and they are cold pressed within 6 hours using solely mechanical processes. The harvest, done by hand according to ancient traditions, is done prematurely, giving up quantity in favor of quality. In this first phase, the drupes are carefully selected. The research of purity and integrity, the exaltation of organoleptic properties and the preservation of aromas and flavors are the main focus of Il Bordone Farm. After the olives are harvested and cold pressed, in order to maintain its organoleptic properties unaltered , the product is stored in dark environments inside steel tanks away from oxygen and other elements that could alter its quality.
Vastuni EVOO presents a spicy and bitter taste, balanced by delicate sweet notes. The intense and rich aroma of this oil features scents of cut grass, green apple and tomato leaf, typical of the Sicilian land and the Val Tellaro area. High in polyphenols, "Vastuni" is the exaltation of raw cooking, but also easily adapts to the preparation of some of the most renowned pastry delicacies. The label is essential and recognizable, a reference to the oil, the company and to the good Italian taste that has always distinguished this farm.
