Red shrimp tartare is a gourmet dish made from raw, finely diced premium crustaceans like Mediterranean Mazara red prawns. Revered for their vibrant color and natural sweetness, they are flash-frozen at sea to ensure food safety and preserve fresh, delicate marine flavors. Unlike most shrimp that are translucent or gray when raw, red shrimp boast a deep, vibrant red hue resulting from their nutrient-rich diets and deep-sea, cold-water habitats.
They are widely considered to be some of the sweetest and most flavorful shrimp in the world, often described as having a taste comparable to lobster.
Safe for Raw Consumption: Because tartare is eaten raw, you must use high-quality, flash-frozen-at-sea shrimp to avoid parasites. Never attempt to make tartare with standard, farm-raised shrimp that isn't designated as sushi or tartare grade.
Thawing Instructions: Thaw the frozen tartare safely in the refrigerator for 3 to 4 hours, or quick-thaw the sealed pouch in cold water for 5 to 10 minutes. Consume within 24 hours of thawing and do not refreeze.
Texture: When properly thawed and prepared, the meat should be firm, compact, and naturally delicate.
