How to Prepare

1. Soak the dried porcini mushrooms in warm water for 30 minutes. Rinse, squeeze dry, and cut as desired.

2. Heat chicken or vegetable broth and keep warm.

3. In a large saucepan, melt butter and gently sauté onion and garlic until lightly golden.

4. Add the rice and toast briefly until fragrant.

5. Deglaze with white wine and let it absorb.

6. Add hot broth one ladle at a time, stirring constantly. Add saffron with the first ladle.

7. After 15–20 minutes, add the mushrooms and continue cooking until the rice is creamy and al dente.

8. Remove from heat, stir in butter and grated Parmigiano Reggiano. Serve immediately.
