The kit includes:
- 1 Riso Carnaroli Melotti 2.2lb
- 7 oz Dried Porcini Mushrooms
- 2.2 lb Parmiggiano Reggiano Cheese
- 1 Pure Spanish Saffron 2 Gram Tin
Preparation Method
Steep the dried porcini mushrooms in warm water for 30 minutes. Remove, rinse and squeeze dry. Cut to desired sizes.
Heat chicken or vegetable broth in a stockpot over medium-low heat until warmed.
Heat the butter in a large saucepan over medium heat; add onion and season with salt and pepper; add garlic and cook until they pale golden. Add the rice to the onion mixture, cook and stir rice until fragrant, about 1/2 minutes. Pour white wine into the rice mixture, cook and stir until the liquid is absorbed, about 4/5 minutes. Add 1 ladle of the hot broth and the saffron to the rice mixture and stir constantly until the broth is absorbed. Keep adding 1 ladle of broth at a time. After 15 to 20 minutes, the rice should be close to al dente. Add the mushrooms and keep cooking until rice is tender but firm to the bite. Remove from heat and stir in the butter and the grated parmigiano. Serve immediately and enjoy!
