Originating from the Campania Region, Provolone del Monaco DOP is one of the finest Italian cheeses with a rich heritage dating back centuries. This semi-hard cheese is made exclusively from raw cow's milk obtained in the area of the Sorrento Peninsula and the Lattari Mountains. With its slightly elongated melon shape, this cheese presents a pale yellow to straw-colored rind, with an interior golden yellow paste. The texture is semi-hard, compact and uniform and it presents typical small holes that can vary in diameter between 5mm and 12mm. The flavor is rich, buttery, tangy, and slightly spicy.
Aged for a minimum of 6 months, this cheese is prepared following ancient traditional methods. From coagulated raw milk, the obtained curd is reduced in small grains using a wooden tool called “Sassa”, and then proceeds to the burning and the spinning phases. The spinning consists in coiling the curd until the paste achieves the wished consistency in order to then proceed to the shape attributing to give the cheese the typical shape of pear or cylinder. Then follows the brining, the drying and the seasoning that happens in wine cellar for a period from 4 to 18 months.
