This opacity prevented both consumers and pasta makers from understanding the origins of their main ingredient: durum wheat semolina. Recognizing the fundamental value of traceability in food products, he initiated a project that would lead to the creation of Pastificio dei Campi.

He selected Puglia, particularly the Tavoliere and Sub-Appennino Dauno areas, known for their historical cultivation of durum wheat. Here, he encouraged local farmers to produce wheat that was highly nutritious, free from chemical fertilizers, free from glyphosate and focused on preserving ancient varieties.

Despite initial skepticism from farmers about maintaining high quality without chemicals, the solution was clear: sacrifice yield for crop rotation to prevent soil depletion and ensure annual payments to farmers, even in years without a wheat harvest. This approach marked a significant step towards a revolutionary concept—100% traceability across the entire supply chain.
