Produced in Zibello, The Culatta - Cuore di Prosciutto is obtained by processing the finest part of the pork leg, deprived of the staple and the cuff.
This heart of ham partially covered by its rind is salted by hand, and the lean external part is covered with lard to keep it soft over time. After a long maturation of 12 months, its delicate aroma and sweet taste make it a very popular and fine cured meat.
