Produced in the city of Piacenza in Italy's northerly Emilia-Romagna region, Coppa Piacentina DOP is made from the neck muscles of the Landrace Italiana and Duroc pig breeds that are raised in the region with a rich grain, fruit and vegetable diet. This Coppa Piacentina DOP is produced by Salumificio San Carlo, a company leader in the production of DOP cured meats typical of the area of Piacenza. In order to guarantee the authenticity and the original flavor of the final product, Salumificio San Carlo follows a strict production process where the finest cuts of pork are hand-trimmed, cured with a traditional blend of salt and spices, and slowly cured for weeks until they are perfectly aged and present the typical smell and aroma. By the end of the process, the coppa's interior is a rich ruby red that's generously marbled with buttery, flavor-enhancing fat. This melt-in-your-mouth meat carries the subtle taste of traditional spices and has undertones of savory nuttiness.
