Carpaccio di Gambero Rosso is an exquisite Italian appetizer featuring thinly sliced or gently pounded raw deep-sea red prawns. Celebrated as the "red gold" of the Mediterranean, the ruby-red shrimp are prized for their velvety texture, naturally sweet flavor, and briny freshness.
Gambero Rosso are considered by many to be the best prawns in the world. Their meat is incredibly sweet, subtle, and silky, which melts in the mouth.
Unlike most shrimp that turn pink when cooked, the Mediterranean red prawn is a fiery crimson even in its natural raw state
Because the dish is served raw, the prawns must be of the absolute highest quality and are typically blast-frozen on the boat immediately after being caught to preserve sashimi-level safety and flavor.
The shells and veins are removed by hand, and the prawn tails are gently flattened or sliced into a perfect, translucent disc.
True to traditional Italian seafood crudo, it is usually enjoyed with minimalistic elegance: a drizzle of high-quality Extra Virgin Olive Oil (EVOO), a pinch of flaky sea salt, and a very light squeeze of lemon.
Chefs often elevate it with microgreens, edible flowers, bottarga (cured fish roe), or citrus zest.
