The American Paddlefish (polyodon spathula), lives in the slow-flowing waters of the Mississippi, Missouri, Yellowstone, Ohio, and Oklahoma River systems and was historically found in the Great Lakes.
The American Paddlefish is one of the largest freshwater fish in North America and a distant cousin of the Sturgeon, and has earned the respect of many American and European chefs worldwide. The eggs are firm featuring a natural grey color.
