Recommended Recipe - Risotto with Porcini Mushrooms
To make the most of this product, we recommend cooking a classic Risotto con Funghi Porcini.
Soften the mushrooms in water for 20 minutes. Cut an onion and sauté it in a pan with extra virgin olive oil. Once they are rehydrated, squeeze out the mushrooms and put them in the pan. Let them cook for a few minutes and then pour in the rice. Simmer with white wine until reduced and cook the rice, gradually adding the water used for the mushrooms (remember to save it), followed by the stock. Once cooked, stir in some butter and parmesan.
As a substitute for Fresh Mushrooms, dried mushrooms are certainly a good and fast alternative.
A few tips:
- Soak the dried mushrooms in warm water for 20 minutes before use. Then rinse them under running water and squeeze them out.
- Store the remaining liquid for use in cooking.
- Use 10–15 g of dried mushrooms per serving.
