Talla 00 fillets are larger in size and benefit from longer curing times, resulting in a firm texture, clean aroma, and deep, balanced flavor. The anchovies are salt-cured slowly, using traditional methods perfected along the Cantabrian coast, where mild coastal temperatures support natural maturation.
Each fillet is hand-selected, hand-cut, and hand-packed by skilled artisans known as sobadoras, preserving the integrity of the fish and ensuring exceptional quality in every tray. Finished in sunflower oil, the anchovies retain their natural taste without overpowering the delicate character of the fish.
