Mutti Tomato Puree Passata

Mutti Tomato Puree Passata is a product made from pureed, strained uncooked tomatoes that are sold in tall bottles. It’s all 100% tomato, no additives or flavorings. It’s far smoother than crushed tomatoes and makes gorgeous thick tomato-based sauces.

Overview

Tomato Puree Passata is an uncooked tomato purée that has been strained of seeds and skins. It started in Italy but is used throughout Europe. Some Tomato Puree Passatas are chunkier and some are more creamlike, depending on the brand. Some people declare that passata can also be cooked, but many still agree that it is best uncooked. You will also see it spelled Passato and Passata di Pomodoro, and it can also simply be called “strained tomatoes.”

 

How Is Tomato Puree Passata Different from Other Tomato Products?

Tomato sauce and tomato paste are cooked tomato-based products, which instantly makes them different from passata. Besides, tomato sauce often has other added ingredients such as carrots, onions, and garlic, while tomato paste is cooked down to be extra concentrated and thick. If you cannot find Tomato Puree Passata in your store, the best replacement is tomato purée or take some plain canned tomatoes and run them through a sieve or a food mill.
 

How to Use Tomato Puree Passata

Mutti Tomato Puree Passata can be used in any recipe that calls for tomatoes where there doesn't have to be pieces of tomato, such as sauce, soup, and stew. 

 

Mutti Tomato Puree Passata makes thicker, more intense tomato flavored sauces than using the equivalent amount of crushed or diced canned tomatoes. It’s brilliant to use for making quick pasta sauces and soups, where you don’t simmer for a long time (30 minutes+) to allow chunks of crushed or diced tomato to break down and thicken the sauce.

 

Using Mutti Tomato Puree Passata is especially nice in dishes where you want a fresher tomato flavor to come through rather than a cooked down variant.

 

Difference between Mutti Tomato Puree Passata and….

  • Tomato paste – Mutti Tomato Puree Passata is thinner and is less intensely flavored than tomato paste which has a thicker consistency and is sourer.

  • Crushed canned tomato (or chopped) – Mutti Tomato Puree Passata has a thicker smoother consistency, whereas crushed tomato has thick crushed bits of tomato in a thinner liquid. Crushed tomato needs to be cooked for a while to break down into a thick sauce, whereas tomato puree passata is already a thick sauce consistency.

  • Tomato Sauce (US) – Mutti Tomato Puree Passata is not tomato sauce in the US (which is pureed tomato like passata but with flavorings added). (Note: Tomato Sauce in Australia is like ketchup. In America, Tomato Sauce is like a canned version of tomato passata)

ZUPPA DI POMODORO

The refreshing Zuppa di Pomodoro requires little active time to prepare and is a scrumptious way to stay invigorated on warm days.

Ingredients:

  • 1 cup cucumber, peeled, seeded, and cut into cubes

  • 1 cup zucchini, seeded and cut into cubes

  • 1 cup red onion, cut into pieces

  • 1 cup chopped scallions (white part only)

  • 2 cups red bell pepper, cored, seeded and cut into 1-inch pieces

  • 1 clove garlic peeled and halved

  • 1 bottle Mutti® Tomato Puree Passata

  • 2 cups chilled vegetable stock or broth

  • Salt and pepper to taste

  • 4 slices Italian bread, crust removed

  • 2 tbsp balsamic vinegar

  • 2 tbsp extra virgin olive oil

  • 2 tbsp Mutti® Double Concentrated Tomato Paste (Doppio Concentrato)

  • 1 tbsp sugar

  • 2 tbsp mayonnaise

Garnish:

  • 1 can Mutti® Cherry Tomatoes drained and chopped (14 oz., Ciliegini)

  • Finely chopped yellow onion

  • Chopped parsley or microgreens

Method:

  1. Chop the vegetables and place them in a large container with a lid. Add the Mutti® Tomato Puree Passata and vegetable stock or water, cover, and place in the refrigerator to marinate for 24 hours.

  2. When the mixture has marinated, make the soup. Puree the vegetables, tomato puree, and vegetable stock/broth in a food processor, then set aside in a bowl. Crumble the bread into a food processor. Blend until it’s turned into a fine crumb, and then add the vinegar, oil, Mutti® Tomato Paste, sugar, and mayonnaise. Process together until it becomes a smooth paste. Add some of the vegetable mixture (work in batches so you don’t overflow the food processor) and process for 1- 2 minutes to make sure the mixture is as smooth as possible. If you’ve pureed it in several batches, mix everything. Cover the soup, put it in the refrigerator, and allow it to chill for at least 2 hours.

  3. To serve the zuppa di pomodoro, remove the soup from the refrigerator and stir it, as some of the liquid will have separated. Season with salt and pepper to taste. Ladle into bowls, garnish with Mutti® Cherry Tomatoes, chopped onion, and parsley or microgreens, and serve.
