Mutti Tomato Vinegar

Tomato vinegar is the latest addition to the Mutti family of products, which remains true to its mission of "Providing a maximum expression for the tomato". This unique and original vinegar restores all the intense flavors of a tomato.It is the result of a very complex production from tomatoes ripened in the August sun, reduced to the state of liquid tomato juice concentrate. The fibers are then separated from the liquid substance, which gives a very clear and very pure juice. This juice is then subjected to alcoholic fermentation and then to a second acetic fermentation. No chemical substances or processes are used in the manufacture of Mutti tomato vinegar.

Faithful to a tradition of excellence in the finished product, Mutti has made a point of preserving the naturalness and authenticity of the tomato. Mutti tomato vinegar releases peat and wood flavors as well as a fragrance reminiscent of that of dried tomatoes. Spicy aubergines with tomato vinegar recipe

Ingredients

  • 4 eggplant
  • extra virgin olive oil 

  • salt

  • Aromatic herbs

  • 2 teaspoons of chili pepper oil

  • 2 tablespoons vinegar with tomato

  • 2 clove garlic

Cut 3-4 long aubergines into thick slices, add salt and leave to drain in a colander for 20 minutes. Dry them with kitchen paper, align them on the oven pan, brush them with extra virgin olive oil and cook them under the hot grill, turning them once during cooking.

Finely chop 2 cloves of fresh garlic, chop 2 handfuls of fresh herbs (parsley, fennel, basil, mint), mix with the garlic and season with a pinch of salt and a drizzle of oil. Season the aubergines with 2 teaspoons of chili pepper oil and 2 tablespoons of Mutti tomato vinegar, add the herbs and serve after marinating for a few hours.

 

A simple and natural recipe with an intense ruby red color, a scent reminiscent of sundried tomatoes and an aromatic, tasty flavor without the typical sourness of wine vinegars. Obtained by processing selected ripe tomatoes in a natural way.
