The oil has another concentration of polyphenols, but the analysis and the relative nutritional values prove to be good for the body.Ligurian extra virgin olive oil has a high caloric content, due to its particular composition that sees a high presence of fat: it contains about 309 calories (or 899 Kcal) for every 100 grams of the product.

A mixture is made up of 99% fat, divided as follows (on an average of 100 grams of product):

  • 14.45 gr of Saturated Fat
  • 72.95 gr of Unsaturated Fat

  • 7, 52 gr of Polyunsaturated Fats

In this mixture, the content of Polyunsaturated Fats is particularly important: the lower its presence, in fact, the more the olive oil is stable to oxidation.

The small remaining percentage is composed of:

  • fat-soluble vitamins (vitamin E, vitamin A, vitamin D, vitamin K)
  • phytosterols

  • polyphenols.

Recipe

Serving size: 4

  • 500 gr. of chickpea flour

  • Extra virgin olive oil Riviera Ligure Dop

  • Salt

Preparation

  • Put the chickpea flour in the water (1,500 ml) and leave to rest for at least 4 hours.
  • Remove the foam that has formed on the surface and add 250 ml of water and salt to taste, stirring with a whisk.

  • Take a pan large enough for the thickness to be about 1 cm, pour 1 ladle of DOP Riviera Ligure extra virgin olive oil then mix, mix with a spatula from the edge towards the center until the oil is well blended.

  • The oven will have to be very hot, it must cook until the surface is golden, it should be served fresh with a sprinkling of black pepper.
