Known locally as toma brusca in the Piedmontese dialect, this cheese reflects a rare and time-honored method in which the milk is allowed to naturally acidify before curdling, creating a flavor that develops from the rind inward.
Produced with pasteurized cow’s milk from Bruna Alpina and Pezzata Rossa cows breeds prized for their naturally higher milk acidity Castelrosso has a dense, chewy texture and a flavor profile that evolves beautifully with age. Near the rind, earthy and rustic notes emerge, while the interior delivers a lactic, tangy finish that becomes more pronounced with each bite.
