Freshness & Storage

Shelf Life:
• Freshly harvested chanterelles stay fresh in the refrigerator for 3–4 days.
• Store-bought chanterelles should be consumed the same day or within 24 hours.

Refrigeration Tips:
• Clean chanterelles before storing. Dirt becomes more difficult to remove once mushrooms absorb refrigerator moisture.
• Wrap cleaned mushrooms in a paper towel or breathable cloth and store in the vegetable compartment.
• For longer storage, blanch briefly in salted boiling water, dry well, and freeze at –18°C (0°F). Frozen chanterelles keep for up to one year.


Cleaning Instructions

Chanterelles often hold soil and forest debris. For best results:
• Clean immediately after purchase.
• Wipe gently with a soft brush or cloth.
• Avoid soaking in water; mushrooms absorb moisture and lose texture.

The chanterelles were not as flavorful as I had hoped, and the condition was mediocre - their edges were deteriorated and some parts I had to cut away entirely and discard. Disappointing for the price – $67 including $19 shipping for one lb chanterelles.
