I Contadini grow their Ciliegini tomatoes in their land, a few miles away from the sea, from April to July. In July, the tomatoes are harvested and immediately selected and cut, a process that takes place strictly by hand. The word "Confit" comes from the French and describes an ancient preservation technique that involves a long, low temperature drying process with sugar. This slow process allows the cherry tomatoes to keep their fresh and rich flavor almost unchanged, while the sugar gives them a pleasant sweet taste. Furthermore, this process allows the preservation of the tomatoes nutritional properties, which remain rich in lycopene and mineral salts. Confit Cherry Tomatoes are excellent as a starter, to garnish bruschetta and salads, and they are ideal in combination with cheese, meat and fish dishes.
About I Contadini
I Contadini are located in Ugento, in the Salento area of Puglia. Edoardo, Emanuele and Gianna are the three Trentin siblings who grow, harvest, transform and prepare lots of vegetables, according to the strong traditions that are deeply rooted in the area. A childhood spent in the sunlit fields, where their grandpa Fiumano grew capers. Three very different siblings, united by a big dream. They have love for the land in their blood; they get up when it’s still dark, following nature’s rhythms, the seasons, and without ever losing their smile - an element that is as essential as water. Fresh and healthy are words that have true meaning for them: hard work, respect for people and nature, a love for simplicity and wholesomeness.
