Sant Gil D’Albió Garrotxa is crafted by Josep, a skilled cheesemaker who took over his family’s business at just 23 years old. For nearly two decades, he has worked with local farmers to source the finest Murciana goat’s milk, ensuring a cheese that is both authentic and exceptional. Aged for 75 days, this semi-firm cheese develops a full-bodied, balanced flavor, with rich nutty and herbal notes that lead to a long, smooth finish. The fresh, high-quality milk adds brightness, making this a standout among traditional Spanish cheeses.
