The kit includes:
- 1 Garganelli Marcozzi Pasta 8.8oz
- 1 lb Fresh Fava Beans
- 1.5 lb Approx. Pancetta Tesa Iberico De Bellota
- 2.2 lb Pecorino Romano Cheese DeRoma Agri-in DOP
- 1 Sabina DOP Extra Virgin Olive Oil
Preparation Method
Prepare the fava beans by bringing a pot of salted water to a boil. Parboil for 1 minute and plunge the favas into cold water to stop the cooking. Pop each bean out of its outer skin and put them on the side.
Heat 2 tablespoons of extra virgin olive oil in a pan and add the onions and the diced pancetta with a pinch of salt and pepper. Cook slowly over low heat until the fat is rendered, the onions are golden brown and the pancetta crispy. Add 2 cloves garlic, the shelled fava beans and 1 cup of water. Increase the heat and cook until the water begins to evaporate and the beans begin to break down, about 7/10 minutes. Add more water to the pan if it starts to dry out. Cook the Garganelli in salted boiling water until "al dente", drain and transfer the pasta to the pan (save 1 cup of the pasta cooking water). Add a few tablespoons of the cooking pasta water to the pan, add some grated Pecorino Romano and 2 tablespoons of extra virgin olive oil, and cook the pasta in the sauce until well blended. Transfer the pasta to serving plates and finish with a generous amount of grated Pecorino Romano.
