Pastificio dei Campi - Modern Interpreters of a Centuries-Old Tradition

Transparency and respect for the supply chain are the cornerstones of Pastificio dei Campi production philosophy. In 2004, Giuseppe Di Martino, a third-generation pasta maker from Gragnano, realized the traceability of the raw materials used in Italian pasta production was often vague, breaking down at a certain point in the supply chain. This opacity prevented both consumers and pasta makers from understanding the origins of their main ingredient: durum wheat semolina. Recognizing the fundamental value of traceability in food products, he initiated a project that would lead to the creation of Pastificio dei Campi.

He selected Puglia, particularly the Tavoliere and Sub-Appennino Dauno areas, known for their historical cultivation of durum wheat. Here, he encouraged local farmers to produce wheat that was highly nutritious, free from chemical fertilizers, free from glyphosate and focused on preserving ancient varieties.

Despite initial skepticism from farmers about maintaining high quality without chemicals, the solution was clear: sacrifice yield for crop rotation to prevent soil depletion and ensure annual payments to farmers, even in years without a wheat harvest. This approach marked a significant step towards a revolutionary concept—100% traceability across the entire supply chain.

Pastificio dei Campi is redefining quality by making their production process transparent and inviting consumers into the journey of their pasta. Through a pioneering traceability system, consumers can access detailed data about every stage of production. From the sowing of the wheat to the manual packaging of the finished product, every step is documented. Consumers can learn when and where the wheat was grown, the granary where it was stored, the mill where it was ground into semolina, and the exact day it was turned into pasta. This openness not only sheds light on their process but also connects consumers with the people behind each packet of pasta—from the farmers to the packaging designers. They believe in complete transparency to create a dialogue with consumers and showcase what makes their pasta uniquely trustworthy.
