Tete de Moine Cheese - 2lb Whole Wheel
Made of raw cow's milk, this semi-hard cheese has a dense texture and an intense, sweet and tangy flavor, that reminds of musty wood and nuts. Unlike most other mountain gourmet cheeses which tend to be very large, this cheese is made in small drums, and presents a firm and creamy paste, with a straw-yellow color that tends to darken as the cheese ages. Tete de Moine is considered one of the stronger, sweeter Swiss cheeses and pairs nicely with fresh or dried fruits or hearty dessert wines of equal intensity.
Tete de Moine literally means Monk's Head. Eight centuries ago, in the Swiss Jura Mountains, monks of Bellelay Abbey started to fashion small cylindrical ''monk's head'' cheeses, and invented a machine called "girolle", to thinly shave away layers from the top, exposing a bald spot.
Tete de Moine can be sliced with a regular knife, but to get the frilly curls that are traditionally served in Switzerland you will need to use a cheese curler or girolle. The curls are achieved by turning the handle of this special knife on a stand and shaving the cheese across the top and a little way down the sides.
