Sant Gil d’Albió Garrotxa is produced by Josep, a dedicated cheesemaker who began leading his family dairy at just 23 years old. Using high-quality Murciana goat’s milk from local farmers, he crafts a cheese that reflects the landscape and heritage of the region. Aged for 75 days, this semi-firm wheel develops a smooth, creamy texture and a refined flavor profile with nutty, herbal notes and a clean, lingering finish.
