Species Details

The Sevruga sturgeon (Acipenser stellatus) is the smallest yet most intensely flavored member of the traditional Caspian Sea trinity, native to the Black Sea and Caspian Sea. It matures relatively quickly, in 7–10 years, making it ideal for sustainable production. Though typically up to 5 in length and around 50 pounds, the Sevruga produces bold, flavorful roe prized by connoisseurs. Sustainably farm-raised today, this sturgeon preserves the qualities that have made Sevruga caviar a hallmark of Caspian tradition. Its balance of intensity and approachability ensures a memorable, authentic caviar experience.
Quality Indicators
Appearance of Sevruga Caviar
Sevruga caviar features small pearls with a fine grain structure, creating the elegant, refined presentation characteristic of this historic species. Its dark gray to black coloration reflects authentic Sevruga appearance, instantly recognized by connoisseurs. The small, consistently sized pearls provide delicate visual appeal while maintaining traditional aesthetic standards and ensuring the caviar’s historic significance and classic Sevruga character are preserved.
Texture of Sevruga Caviar
Sevruga offers a delicate texture with a fine-grained mouthfeel that packs extraordinary flavor into each small pearl. Each pearl provides a subtle pop highlighting the characteristics that define Sevruga’s bold profile. Proper firmness and balanced salinity ensure a refined, traditional texture. This delicate structure reflects the sturgeon’s efficient maturation and expert processing techniques. Small pearls achieve extraordinary intensity and sophistication, rivaling larger-grained caviar varieties.
Flavor Profile of Sevruga Caviar
Sevruga captivates with a bold, intense flavor that commands attention from the first bite. Its complex character unfolds in waves, layering concentrated, cherished notes that deliver maximum impact despite the small pearls. Each bite reflects the sturgeon’s natural intensity and careful maturation, creating depth and richness that rival larger-grained caviar. The taste evolves from a striking initial burst to a layered, lingering finish that leaves a memorable impression. Small in size but mighty in flavor, Sevruga remains a celebrated jewel of the Caspian caviar tradition.
Storage and Serving Guide
How to Serve Your Caviar and Roe
Step 1: Proper Storage & Temperature
Keep your caviar and roe refrigerated at 28°F to 32°F until you're ready to serve. Remove from the refrigerator 10-15 minutes before serving to acclimate to the ambient temperature. Caviar and roe should be served chilled but not ice-cold, as extreme cold mutes the delicate flavors.
Step 2: Choose the Right Serving Vessel
Use non-metallic serving spoons to prevent a metallic taste from clashing with your caviar and roe. Mother-of-pearl, bone, or plastic spoons are the best options. Serve in small glass or ceramic bowls nested over crushed ice to maintain a safe temperature. If you don't have serving bowls, you may place the opened caviar tins in a bowl of crushed ice. The tins have food-safe varnish that prevents a metallic taste.
Step 3: Portion Appropriately
Plan for ½-1 ounce per person as an appetizer with other foods so all guests can have "a taste." For a full caviar portion, serve 1 ounce per person. Use a gentle touch when portioning and never press or crush the delicate pearls.
Step 4: Select Complementary Accompaniments
Serve with items that complement without overpowering the mild, nuanced flavors. We recommend:
- Blinis or toast points (unsalted)
- Crème fraîche, light sour cream, or clotted cream
- Champagne, vodka, or crisp white wines
Pro-Tip: Skip the chives, red onions, chopped eggs, and other accompaniments in a traditional caviar service. These traditional accompaniments were introduced when preservation methods required heavily salting the caviar. With today's advanced refrigeration methods, caviar does not need to be over-salted and you can enjoy the caviar's true flavor profiles.
Step 5: Serve and Enjoy Immediately
Present your caviar and roe just before serving. Invite your guests to take small portions and savor slowly on the palate to appreciate complex flavors and texture. Enjoy within 2 hours of opening and never leave at room temperature for extended periods.
Pairings
Sevruga pairs beautifully with classic champagnes and premium ice-cold vodka, which complement its intense, complex flavor without overpowering it. These classic presentations highlight the caviar’s bold character and its role in the legendary Caspian trinity along with Osetra and Beluga. By maintaining these traditions, Sevruga offers an authentic luxury dining experience that connects modern diners with its historic heritage.
