Cavatelli Grano Arso is a traditional Apulian pasta made with a blend of hard wheat and burnt wheat flour, known in Italian as grano arso. Once born out of necessity, grano arso has evolved into a sought-after delicacy thanks to its bold, smoky flavor and rustic character.
These small, elongated pasta shells are hand-shaped to capture sauces beautifully, making them ideal for hearty ragùs, creamy burrata, or simple dressings with extra virgin olive oil and sautéed greens.
