These tuna fillets, tender and with a fine taste, are selected and prepared by craftsmen fresh and by hand. 100% natural and preserved in water. The fish is peeled and processed manually, which is of particular importance in the manufacture of the product since the absence of chemical products preserves the natural properties and ensures high-quality Tuna Callipo and food safety. As soon as the fresh fish is received, it is cleaned and sorted: only the back pieces, fat-free and very tender, are used to make the preserves. The secret of Callipo tuna is in the treatment on the fishing grounds. From the moment the fish transit from the port to the place of conservation, the first manual cleaning and the first cutting of the abdominal part begin. Cooking follows, never aggressive and always respectful of the nutritional properties of the fish and, afterward, cutting into slices and fillets. These are then arranged one by one and manually in a jar, meticulously, so that they remain whole. It is only at the last moment that the olive oil is poured for preservation, but without concealing the taste.

The tuna salad with sheep's cheese is light, Mediterranean and delicious. Practical: The recipe only requires a few ingredients that you may already have at home. Tip: If you want to save calories, it is best to use a can of tuna in your own juice instead of tuna in oil.

According to the recipe, you need the following ingredients for two servings of salad creation:

 

  • 2 handfuls of lettuce

  • 1 jar Tuna Callipo

  • 100 g sheep cheese

  • 4 tomatoes

  • 30 ml of oil

  • 20 ml balsamic vinegar

  • Salt pepper

Preparation

First, wash the lettuce thoroughly and spin dry. Then clean the tomatoes and cut them into small pieces. Dice the sheep cheese and mix everything with the fish. In the end it is the turn of the dressing: mix it from the balsamic vinegar and the oil. Don't forget to season with salt and pepper. Mix the whole thing in the Callipo tuna salad - the recipe is ready.

The yellow-fin tuna is fished in total accordance with the protections of the habitat of the sea and is dolphin-safe. The meat is ripened in olive oil for at least one year before sale according to product size.

After being fished, this yellow-fin tuna is processed at the Maierato (VV) plant, where it undergoes the entire one-day processing cycle, from the selection of the pieces to the cleaning, from the steam cooking to the packaging, whilst fully respecting the antique handcrafted tradition.
