In the Ferrarini EFFE plants (the first to obtain ISO14001 certification for environmental impact), all the delicate processing stages take place according to the ancient local tradition. Maturing takes place in environments with humidity and temperature characteristics constantly controlled by innovative technologies that use patents designed and registered by Ferrarini.
It is therefore among these green Parma hills, not far from Reggio Emilia, that Ferrarini Prosciutto di Parma DOP is born, whose sweet taste comes to life from a natural ingredient: time. Gradually, through a slow and patient maturation, which lasts for at least 14 months, his unmistakable taste matures.
Neither dyes or preservatives nor additives but only Italian pork and balanced salting, according to an ancient ritual that recalls sowing: these are the ingredients of an excellent product, recognized all over the world.
History of Ferrarini
Founded in Reggio Emilia in 1956 by Lauro Ferrarini, the company is now one of the most important European companies in the agri-food sector and proposes worldwide, in addition to its cooked ham, the typical Italian products: from Parma ham to different delicatessen specialties, accompanied by the products of the Ferrarini farm, from which the entrepreneurial activity started, such as Parmigiano Reggiano Dop, wines and balsamic vinegar of Modena and Traditional PDO.
The area of agricultural production, of the Ferrarini Farms, from which entrepreneurial activity began, has developed considerably over time and today represents important support for industrial activity. The production of “Parmigiano Reggiano Dop” boasts Ferrarini's entire supply chain - fodder, dairy cows, processing and seasoning - as well as important awards (the first certified company in the Parmigiano Reggiano area). The activity of Ferrarini includes the production and marketing of wine and balsamic vinegar from Modena and Traditional of Reggio Emilia, obtained from vines located on owned land.
There is no doubt ... the sweetly flavored fragrance and the tasty flavor make Ferrarini cooked ham unmistakable, among many others. And it is in the recipe that the secrets of such a special product are hidden: a brine with aromatic herbs and a very slow steam cooking that reaches the heart of the product. Very high quality and unique taste have allowed them to be undisputed leaders.
For Ferrarini Prosciutto di Parma DOP means scrupulous selection of the raw material, with great attention to the color of the meat, its consistency, and its fat-thin ratio. It means careful processing, in deboning, in the massage and in cooking so that the cooked ham retains its fragrance and its characteristic aroma. High Quality means total product traceability guaranteed by rigorous controls and certifications.
Ferrarini Parma Prosciutto are aged for 14 months in the cellars in Lesignano de 'Bagni, a town founded on the banks of the Parma river opposite of Langhirano, a district renowned throughout the world for its Parma Ham.
