Prosciutto Cotto Ham is a special ham produced in Italy. A mild, balanced seasoning and a particularly delicate mouthfeel are characteristic of the ham specialty. It is usually used in very thin slices and cuts as well as on a purist pizza with mozzarella.

HISTORY: The origins of Prosciutto Cotto Ham Alma are very old: to tell the story, the Romans were the first to cook this meat from the ham's thigh. The process was boiling with the addition of dried figs and bay leaves and then the whole was covered with honey before being cooked in a crust. It is probable that the legionaries have learned from the Gauls, the Lombards or other barbarian populations gradually absorbed by the empire the first notions of the preparation of cooked ham; it is no coincidence that the regions producing the best qualities of cooked ham (by tradition) are: Friuli Venezia Giulia, Lombardy, Piedmont, Liguria, and Emilia-Romagna.

Prosciutto cotto literally means cooked ham in Italian. It is the most commonly used deli product in Italy. A prosciutto cotto differs from an American ham in several ways. First, the skin is left on the top of the product (like prosciutto di Parma) to keep in moisture and flavors. Second, the prosciutto is cooked very slowly creating a unique flaky texture. Third, the spices used are more aromatic and there is no smoking or sweetening making a more delicate flavor. It is also very low in sodium.
Suggestion: The uses of the prosciutto cotto are as many as the uses of ham with sandwiches and pizzas being most common.
